White Bean Chicken Chili: A Cozy and Easy Comfort Meal

Ingredients
  

Peppers

  • 3 pieces jalapeño peppers

Aromatics

  • 2 tablespoons olive oil (60 ml)
  • 4 cloves garlic, minced
  • 1.5 cups yellow onion, diced (¼" dice, about 195 g)
  • 1 tablespoon cumin (6 g)

Protein and Base

  • 1.25 pounds boneless skinless chicken breasts (about 568 g)
  • 1 cup roasted green chilies, canned divided, about 232 g
  • 2.5 cups white beans (two 15 oz cans, drained, about 850 g)
  • 1 cup unsalted chicken stock divided, about 240 ml
  • 1.5 cups corn (15 ounce can, about 425 g)
  • 1.25 teaspoons kosher salt more as needed (about 5 g)
  • 0.25 teaspoon black pepper

Cooking Instructions

  • Turn on the broil setting on the oven. Roast the jalapeños until the skins brown and blister, about 15 minutes. Cover with plastic wrap to cool.
  • Remove the skin and stems from the cooled jalapeños. Leave seeds for spicier chili or remove for milder.
  • In a large microwave-safe bowl, combine olive oil, onions, garlic, and cumin. Microwave for 3 minutes, stir, and cook for another 2 minutes until onions are tender.
  • Add the aromatics, chicken, ½ cup roasted green chilies, corn, 1 cup white beans, and ½ cup chicken stock to the slow cooker.
  • In a blender, puree ½ cup roasted green chilies, jalapeños, 1 cup beans, and ½ cup chicken stock until smooth, about 45 seconds. Add this to the slow cooker.
  • Add salt and pepper to the slow cooker. Cover and cook on high for 3 hours or low for 6 hours.
  • Remove the chicken, shred or cut it into cubes, and return to the slow cooker. Stir to combine.
  • Taste and season with more salt and pepper as needed. Serve warm with desired toppings.

Notes

Serving Size: about 1 ½ cups. Suggested toppings include avocado, jalapeños, sour cream, green onions, cilantro, and radish.
