Ingredients
  

Pie Crust

  • 1.25 cups all-purpose flour divided
  • 1 tablespoon granulated sugar
  • 0.5 teaspoon salt
  • 6 tablespoons cold unsalted butter cut into ¼-inch slices
  • 0.25 cup vegetable shortening chilled, cut into 2 pieces
  • 2 tablespoons ice water
  • 2 tablespoons vodka chilled

Apple Filling

  • 5 large Granny Smith apples about 2½ pounds
  • 4 large McIntosh apples about 2 pounds
  • 0.25 cup granulated sugar
  • 0.5 teaspoon ground cinnamon
  • Pinch salt
  • 2 tablespoons unsalted butter
  • 0.5 cup heavy cream

Streusel Topping

  • 1.25 cups all-purpose flour
  • 0.33 cup light brown sugar
  • 0.33 cup granulated sugar
  • 7 tablespoons unsalted butter melted

Instructions
 

Make the Pie Crust

  • Process ¾ cups of the flour, the sugar, and salt together in a food processor until combined. Add the butter and shortening and process until a homogenous dough just starts to collect in clumps.
  • Scrape down the sides of the bowl and add remaining flour. Pulse until evenly distributed.
  • Add vodka and ice water, mixing until slightly tacky. Shape into a 6-inch round and roll into a 13-inch circle.
  • Transfer dough to pie plate, trim, and flute edges. Refrigerate for at least 2 hours.

Blind Bake the Pie Crust

  • Preheat oven to 350°F. Line pie dough with aluminum foil and fill with sugar. Bake for 40 minutes, then cool on a wire rack.

Make the Apple Filling

  • Peel, quarter, and slice apples. Toss with sugar, cinnamon, and salt. Cook apples until tender for about 10 minutes.
  • Drain apples, then boil the drained juice and cream until thickened, about 5 minutes. Pour mixture over apples in pie shell.

Make the Streusel Topping

  • Combine flour and sugars, drizzle with melted butter, and mix until moistened. Sprinkle over pie filling.

Bake the Pie

  • Bake pie until streusel is golden brown, 10 to 20 minutes. Cool to room temperature before serving.

Notes

Pie crust can be refrigerated for up to 4 days or frozen for up to 3 months.
