Ingredients
  

Potatoes and Dairy

  • 5 lbs russet potatoes peeled and cubed
  • 8 tablespoon salted butter melted
  • 2 tablespoon salted butter cold
  • 8 oz cream cheese softened and cubed
  • 1 cup half and half
  • 0.5 teaspoon salt
  • pepper to taste
  • chives optional, for topping

Cooking Instructions

  • Preheat oven to 350°F.
  • Peel and cube the potatoes. Rinse thoroughly, then place in a large pot, cover with water, and add salt. Boil until fork tender, about 10-15 minutes. Drain and return to pot.
  • Turn heat to low and steam out excess moisture for 3 minutes.
  • Transfer potatoes to a large bowl or stand mixer. Beat on low until broken up. Add melted butter, salt, and pepper. Mix in cream cheese and slowly add warm half and half until desired consistency is reached.
  • Spread mixture into a greased 9x13 baking dish. Sprinkle cold butter cubes over the top.
  • Bake for 45 minutes. Remove from oven and serve.

Notes

For best results, ensure potato cubes are even in size for uniform cooking. You can prepare in advance and refrigerate before baking.
