Ingredients

Beef Filling

  • 1 lb ground beef
  • 2 cloves garlic minced
  • 2 tablespoon soy sauce
  • 1 tablespoon fish sauce
  • 1 tablespoon lime juice
  • 1 teaspoon sugar
  • ½ teaspoon chili flakes
  • 1 cup Thai basil leaves chopped
  • 1 cup vegetable carrot or bell pepper, julienned
  • ¼ cup fresh mint or cilantro

Wrapping

  • 8 pieces rice paper wrappers
  • 8 pieces small lettuce leaves

Instructions

Preparation

  • In a skillet, cook beef with garlic until browned.
  • Stir in soy sauce, fish sauce, lime juice, sugar, and chili flakes.
  • Turn off heat and mix in Thai basil.
  • Prep veggies and herbs while beef cools slightly.
  • Dip rice paper in warm water until soft, then lay flat.
  • Layer lettuce, beef, veggies, and herbs in the center.
  • Roll tightly like a burrito, folding in sides first.
  • Serve with sweet chili or fish sauce dip.

Notes

Don’t overfill rolls—less is more for clean wrapping. Use mint and cilantro if Thai basil isn’t available. Cover finished rolls with damp towel to keep fresh. Make vegetarian with tofu or mushrooms instead of beef.
