For the dough

  • 8 oz block cream cheese, full fat
  • 4 tablespoon butter, at room temperature
  • 8.5 to 9.5 cups powdered sugar, sifted
  • 1.5 teaspoon peppermint extract
  • 1 teaspoon vanilla extract
  • gel food coloring, as desired

For shaping and finishing

  • 0.5 cup powdered sugar, for coating and dusting

Preparation Steps

  • Set the cream cheese and butter out at room temperature for about one hour to soften.
  • In a large mixing bowl, cream together the softened cream cheese and butter until smooth and creamy.
  • Add 1 cup of the powdered sugar to the creamed mixture and mix until smooth, then add the peppermint and vanilla extracts, mixing until fully incorporated. Gradually add the remaining powdered sugar until the dough reaches a Play-Doh-like consistency.
  • Separate the dough into portions for color variations. Add gel food coloring to each portion, knead until evenly distributed, wrap in plastic wrap, and refrigerate for one hour.
  • Line a baking sheet with parchment paper. Measure out 1 teaspoon of dough for each mint, roll into balls, and place on the baking sheet.
  • Pour ½ cup powdered sugar into a bowl for dusting. Dip a fork in the powdered sugar and press down on each dough ball to flatten and create a pattern.
  • Let the shaped mints sit out at room temperature for 4 hours to harden, then flip and allow to harden for an additional 2 hours.

Notes

Be generous with powdered sugar while shaping to prevent sticking.
