Ingredients
  

Potatoes

  • 2 pounds russet potatoes peeled and small diced
  • 3-4 Tablespoons oil for coating
  • 1.5 teaspoons salt
  • 0.5 teaspoon pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 pound ground beef browned
  • 1 packet taco seasoning
  • water for taco seasoning amount called for on the packet
  • 8 ounce Mexican shredded cheese
  • optional toppings pico de gallo, guacamole, sour cream

Instructions
 

  • Coat potatoes in oil.
  • Season potatoes with salt, pepper, garlic powder, and onion powder, and mix to coat.
  • Cook potatoes in air fryer at 400F for 18-20 minutes, shaking the basket 2-3 times.
  • Brown and crumble ground beef, drain excess grease, then add taco seasoning and water, cooking to packet directions.
  • Layer cooked potatoes, top with seasoned ground beef, then add Mexican shredded cheese and optional taco toppings.
