Ingredients
  

  • ¾ cup half and half
  • ½ cup pumpkin puree canned or fresh
  • 4 eggs eggs
  • 2 ½ tablespoon packed light-brown sugar
  • 1 ½ teaspoon vanilla extract
  • 1 ¼ teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • ¼ teaspoon ground ginger

Instructions
 

  • Preheat oven to 225 degrees. Preheat an electric griddle to 350 degrees (a non-stick skillet set over medium heat also works fine).
  • In a shallow dish whisk together pumpkin, eggs, brown sugar, vanilla, cinnamon, nutmeg.

Notes

Serve with syrup or powdered sugar for extra sweetness.
