Pistachio Cookie Mixture

  • 1.25 cups unsalted shelled pistachios raw or toasted
  • 2 cups all-purpose flour spooned and leveled
  • 0.25 cups powdered sugar plus more for rolling (about ¾ cup more)
  • 0.25 teaspoon salt
  • 1 cup unsalted butter softened to room temperature
  • 1 teaspoon pure vanilla extract optional

Preparation Steps

  • Using a small food processor, finely chop the pistachios, leaving a few larger pieces for texture.
  • In a large bowl, combine ground pistachios, flour, powdered sugar, and salt. Mix to combine.
  • Add the butter and vanilla to the dry ingredients. Mix and mash until you get a soft dough.
  • Cover and chill the dough for 30 minutes.
  • Preheat the oven to 350°F and line a baking sheet with parchment paper.
  • Pinch off 1 tablespoon sized portions of dough, roll them into smooth balls, and place on the baking sheet, leaving space between each ball.
  • Bake for 12 to 15 minutes or until lightly browned along the edges.
  • Cool the cookies for 5 minutes on the baking sheet.
  • Toss the cookies in powdered sugar to coat the outside.
  • Arrange the cookies on a wire rack to cool completely before serving.

Notes

Ensure to gently spoon the flour into your measuring cup to avoid over measuring.
