Ingredients
  

Pie Crust

  • 1 recipe Homemade Pie Crust or All Butter Pie Crust

Filling

  • 8 cups peeled chopped peaches cut into 1-inch chunks
  • cup granulated sugar
  • ½ cup all-purpose flour or ¼ cup instant tapioca
  • 1 Tablespoon fresh lemon juice
  • 1-2 teaspoons peeled minced fresh ginger optional
  • 1 teaspoon ground cinnamon
  • 2 Tablespoons cold unsalted butter cut into small cubes
  • 1 large egg egg wash beaten with 1 Tablespoon milk
  • 1 pinch coarse sugar for sprinkling on crust (optional)

Instructions
 

Preparation

  • Make the crust: Prepare either pie crust recipe through step 5.
  • Make the filling: In a large bowl, gently stir the chopped peaches, granulated sugar, flour, lemon juice, ginger, and cinnamon together until thoroughly combined. Set filling in the refrigerator while you roll out the dough.
  • Adjust the oven rack to the lower-third position and preheat to 425°F (218°C). Place a baking sheet on the bottom oven rack to catch any bubbling-over juices.
  • Roll out the chilled pie dough: Roll out one of the discs of chilled dough until you have a circle 12 inches in diameter. Carefully place the dough into a 9-inch round pie dish and pour the filling into the dish. Dot the top with butter.
  • Arrange the lattice: Roll the second disc of chilled pie dough into a circle 12 inches in diameter. Cut strips of dough to weave a lattice on top of the filling.
  • Lightly brush the top of the pie crust with the egg wash and sprinkle with coarse sugar, if desired.
  • Bake the pie at 425°F for 20 minutes; then reduce the oven temperature to 375°F and continue baking for another 45-50 minutes until the filling is bubbling.
  • Remove pie from the oven and cool for at least 4 hours before slicing.
  • Cover leftovers tightly and store in the refrigerator for up to 5 days.

Notes

Make the filling one day in advance for better flavor. The pie can be frozen for up to 3 months.
