Ingredients
  

Chicken

  • 4 pieces boneless skinless chicken breasts
  • 2 tablespoons butter
  • salt to taste
  • pepper to taste
  • 2 teaspoons Italian seasoning

Rice

  • 1 cup uncooked white rice
  • 2.25 cups chicken broth low sodium recommended
  • 1 lemon juice from 1 lemon
  • 1 teaspoon Italian seasoning

Instructions
 

Cooking Instructions

  • Melt butter over medium heat in a large skillet or pan. Season chicken with salt, pepper, and Italian seasoning. Brown chicken in the butter for 1-2 minutes on each side. Transfer chicken to a plate.
  • Add rice, chicken broth, lemon juice, and remaining Italian seasoning to the pan. Place chicken on top, cover, and simmer over medium-low heat for 20-25 minutes until liquid is dissolved.
  • Garnish with fresh parsley or cilantro and lemon wedges. Serve immediately.

Notes

Cooking time for bone-in, skin-on chicken breasts should be increased to 3-4 minutes per side. For brown rice, increase cooking time to 30-35 minutes. Recipe can be stored in the fridge for up to 3 days or frozen for 3 months.
