Ingredients
  

For the Turkey Mixture

  • 1 lb Lean Ground Turkey Use 90% lean or your preferred type.
  • Salt To taste.
  • Pepper To taste.
  • 1 tablespoon Chili Powder Seasoning.
  • 1 teaspoon Oregano Seasoning.
  • 1 teaspoon Paprika Seasoning.
  • 1 teaspoon Onion Powder Seasoning.
  • 1 teaspoon Dried Basil Seasoning.

For the Veggies

  • 1 medium Yellow Onion Diced finely.
  • 2 cloves Minced Garlic Measure with your heart.
  • 2 medium Zucchini Cut into quarters.
  • 1 cup Bell Peppers Cut into bite-sized pieces.
  • 2 tablespoon Tomato Paste For the sauce.
  • 1 cup Water For the sauce.
  • Garlic Salt To taste.
  • Garlic Powder To taste.
  • Onion Powder To taste.
  • Oregano To taste.
  • Basil To taste.
  • Chili Powder To taste.
  • Paprika To taste.

Cooking Instructions

  • In a large skillet, brown the ground turkey over medium/high heat and drain any excess water/fat. Add turkey seasonings and stir to combine. Remove from pan and set aside.
  • Drizzle 1 tablespoon of olive oil in the pan and add the onion and garlic. Cook for about 3 minutes, or until fragrant.
  • Add the zucchini and bell peppers. Cook for 2 to 3 minutes and then add the veggie seasonings. Cook until desired veggie doneness (5 additional minutes or so).
  • Add the ground turkey back into the skillet and turn the heat down. Then add the tomato paste and water. Let simmer for about 5 minutes.
  • Top with some parmesan cheese (if not dairy free) and serve with garlic bread or over some rice.

Notes

Feel free to swap out the veggies based on what you have on hand. This dish freezes well for up to 2 months.
