Ingredients
  

  • 4 cups butternut squash, cubed
  • 2 tablespoons olive oil
  • 1 medium yellow onion, chopped
  • 3 cloves garlic, minced
  • 1 cup low-sodium vegetable broth
  • 1 cup shredded Gruyère or Cheddar cheese
  • 2 teaspoons fresh thyme or sage
  • 1 cup panko breadcrumbs

Instructions
 

  • Preheat your oven to 400°F (200°C) and lightly spray a baking dish with nonstick cooking spray.
  • Peel and cube the butternut squash into even-sized pieces.
  • In a large skillet, heat olive oil over medium heat. Add chopped onion and sauté until translucent (about 5 minutes).
  • Stir in minced garlic and cook for an additional minute until fragrant.
  • Add cubed butternut squash, vegetable broth, and herbs to the skillet. Cook for about 10 minutes until the squash begins to soften.
  • Transfer the mixture to the prepared baking dish. Top with shredded cheese and panko breadcrumbs.
  • Bake for 25-30 minutes until bubbly and golden brown.
