Ingredients
  

  • 5 ounce goat cheese log
  • ¼ cup crushed or chopped pecans
  • 3 tablespoons apricot preserves or preserves of your choice
  • 2 tablespoons raw honey
  • 1 pinch cinnamon optional

Instructions
 

  • Combine crushed or chopped pecans, apricot preserves, raw honey, and pinch of cinnamon in a small bowl and set aside.
  • Chop your log of goat cheese into 8 equal pieces. Roll the pieces into balls (they don’t have to be perfect).
  • Roll each ball into the pecan, apricot, and honey mixture. You may need to press each ball into the mixture to make sure that they’ve evenly coated.
  • Place the completed ball onto a parchment-lined plate or baking sheet.
  • Repeat this process until each ball is completely coated.
  • Place into the refrigerator 30 minutes before serving. You can serve with toothpicks or even a pretzel stick stuck in the goat cheese ball.

Notes

These cheese balls can be prepared ahead of time and stored in the refrigerator until ready to serve.
