Ingredients
  

  • 200 g cooked chickpeas, mashed
  • 200 g cooked lentils, drained
  • 60 g oat flour
  • 30 g chickpea flour
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 tablespoon soy sauce
  • 1 tablespoon tomato paste
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon smoked paprika
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 0.5 teaspoon cayenne pepper adjust to taste
  • 0.5 teaspoon black pepper
  • 0.5 teaspoon salt
  • 0.5 teaspoon oregano
  • 1 tablespoon flaxseed meal for egg substitute
  • 2 tablespoon water for flaxseed mixture

Instructions
 

  • Prepare the flaxseed mixture by mixing 1 tablespoon of flaxseed meal with 2 tablespoons of water and set aside for 5 minutes.
  • In a large mixing bowl, combine the mashed chickpeas, cooked lentils, oat flour, chickpea flour, and dry spices. Mix thoroughly.
  • Add the onion, garlic, olive oil, soy sauce, tomato paste, apple cider vinegar, and flaxseed mixture to the bowl. Mix until a cohesive dough forms.
  • Divide the dough into four portions, roll each into a log, and wrap tightly in parchment paper or aluminum foil.
  • Steam the sausages in a pot for 30 minutes, ensuring they are not touching each other.
  • Let the sausages cool slightly and unwrap them. Optionally, pan-fry for 2-3 minutes on each side for a crispy texture.
  • Slice, crumble, or serve whole in a bun with toppings. Enjoy your sausages!
