- 4 cloves garlic, grated or minced
- ½ cup balsamic vinegar
- ¼ cup extra-virgin olive oil
- 1 tablespoon kosher salt plus more for seasoning
- 1 tablespoon freshly ground black pepper plus more for seasoning
- 1 piece chuck roast (about 2-lb.) about 1 ½" thick
- flaky sea salt for seasoning after slicing
In a large bowl or baking dish, whisk garlic, vinegar, oil, 1 Tbsp. kosher salt, and 1 Tbsp. black pepper. Add chuck roast and turn to coat. Refrigerate, turning meat halfway through, at least 12 hours and up to 24.
Prepare a grill for medium-high heat; preheat 5 minutes. Grill chuck roast, turning every 5 minutes, until an instant-read thermometer inserted into thickest part reads 120° for rare, 125° for medium-rare, and 135 to 140° for medium, 20 to 30 minutes total.
Transfer meat to a cutting board; let rest 10 minutes. Thinly slice against the grain; season with sea salt.
