To make it dairy-free, use melted dairy-free butter, omit the milk, and use dairy-free chocolate chips. For nut-free, substitute additional gluten-free measure-for-measure flour for the almond flour. Refrigerating the dough yields more flavorful cookies. You can freeze cookie dough balls and store them in a resealable bag.
