Ingredients
  

  • 24 noodles lasagna
  • 4 cups cooked chicken, shredded
  • 4 cups spinach, chopped
  • 4 cups ricotta cheese
  • 4 cups shredded mozzarella cheese
  • 1 cup grated Parmesan cheese
  • black olives, sliced for 'eyes'
  • 6 cups marinara sauce
  • salt and pepper to taste

Instructions
 

  • Preheat oven to 375°F (190°C).
  • Cook lasagna noodles according to package instructions. Drain and set aside.
  • In a bowl, mix ricotta with spinach, salt, and pepper.
  • In a baking dish, spread a layer of marinara sauce. Layer noodles, ricotta-spinach mix, shredded chicken, mozzarella, and sauce. Repeat layers, ending with sauce and mozzarella.
  • Use mozzarella slices cut into ghost shapes, and add olive slices as eyes for a spooky topping.
  • Sprinkle Parmesan over the top.
  • Cover with foil and bake for 30 minutes. Remove foil and bake an additional 10–15 minutes until bubbly and golden.

Notes

For a spooky appearance, use mozzarella shaped like ghosts and olives for eyes.
