Ingredients
  

Potatoes

  • 2 lb roasting potatoes Maris Piper, King Edward, Agria or Yukon gold are good options
  • ¼ cup unsalted butter
  • 3 cloves garlic finely chopped or minced
  • 1 tablespoon fresh lemon juice
  • 1.5 teaspoon salt for boiling
  • 1 tablespoon chopped flat-leaf parsley leaves
  • 2 teaspoon flaky salt for garnish
  • 1 unit lemon zest

Cooking Instructions

  • Heat your oven to 400F/200C fan.
  • Par-boil the potatoes by chopping them into large chunks, cover with cold water, and add 1 teaspoon of salt. Boil for 8 minutes until tender, then drain and shake in the pot.
  • Make the garlic butter sauce by melting ¼ cup of butter in a small pan over medium heat, then adding garlic, lemon juice, and ½ teaspoon of salt. Stir for 2 minutes until fragrant.
  • Cook the potatoes in an oven-proof dish, mixing in the garlic butter sauce. Roast for 30-40 minutes, stirring halfway through.
  • Garnish the potatoes with flaky salt and lemon zest before serving.

Notes

These potatoes aren’t as crispy due to the garlic butter sauce but are still deliciously buttery and soft with a little crispy outside. Best enjoyed the day they are made, can be stored for up to 3 days.
