  • 1.5 cups all-purpose flour
  • 1 tablespoon granulated sugar
  • 1 tablespoon baking powder
  • 0.5 teaspoon ground cinnamon
  • 0.25 teaspoon ground nutmeg
  • 0.5 teaspoon salt

Wet Ingredients

  • 1 cup milk
  • 0.67 cups pumpkin puree
  • 2 large eggs
  • 2 tablespoons melted butter
  • 1 teaspoon vanilla extract

For Serving

  • Maple syrup for serving

Cooking Instructions

  • In a large bowl, whisk together the flour, sugar, baking powder, cinnamon, nutmeg, and salt.
  • In another bowl, mix the milk, pumpkin puree, eggs, melted butter, and vanilla extract until well combined.
  • Pour the wet ingredients into the dry ingredients and stir gently until just combined. Do not overmix.
  • Heat a non-stick skillet or griddle over medium heat and lightly grease with butter or oil.
  • Pour ¼ cup of batter for each pancake onto the skillet. Cook until bubbles form on the surface and edges look set, about 2-3 minutes. Flip and cook for another 2 minutes until golden brown.
  • Serve warm with maple syrup drizzled on top.

Notes

These pancakes are best served warm, and can be paired with crispy turkey bacon for a delicious breakfast.
