Ingredients
  

  • 1.5 cups all-purpose flour
  • 3.5 teaspoons baking powder Use fresh for maximum rise
  • 1 tablespoon granulated sugar
  • 0.5 teaspoon salt
  • 1.25 cups milk (room temperature)
  • 1 piece egg
  • 3 tablespoons melted butter plus extra for cooking
  • 1 teaspoon vanilla extract optional

Instructions
 

  • Preheat oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.
  • In a large bowl, combine the dry ingredients: flour, baking powder, sugar, and salt.
  • In another bowl, mix the wet ingredients: milk, egg, melted butter, and vanilla extract.
  • Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix—lumps ensure fluffiness.
  • Let the batter rest for 5–10 minutes before cooking.
  • Heat a griddle or frying pan on medium heat and add a little melted butter.
  • Pour batter onto the griddle in desired amounts and cook until bubbles form on the surface.
  • Flip and cook the other side until golden brown.
  • Serve warm with your favorite toppings.

Notes

Do not overmix the batter. Use fresh baking powder for maximum rise. Great with add-ins like chocolate chips or blueberries.
