Ingredients
  

Cucumber

  • ¾ cup English cucumber, partially peeled (striped)

Seasonings

  • 1 teaspoon kosher salt, divided
  • 4 to 5 cloves garlic, peeled, finely grated or minced start with 1 to 2 if you prefer less strong flavor
  • 1 teaspoon white vinegar
  • ¼ teaspoon ground white pepper

Main Ingredients

  • 1 tablespoon Greek Extra Virgin Olive Oil e.g., Early Harvest
  • 2 cups plain Greek yogurt

Optional Ingredients

  • 1 handful chopped fresh dill or mint optional
  • 1 package Warm pita bread for serving
  • 1 bowl Sliced vegetables for serving

Instructions
 

Preparation

  • Use a box grater to grate the cucumbers or a small food processor to finely chop them. Toss grated cucumber with ½ teaspoon kosher salt. Spoon into cheese cloth or a double thickness napkin and squeeze dry.
  • In a mixing bowl, place garlic with remaining ½ teaspoon salt, white vinegar, and extra virgin olive oil. Mix to combine.
  • Add the grated cucumber to the bowl with the garlic mixture. Stir in yogurt, pinch of white or black pepper, and fresh herbs (if using). Stir well.
  • Cover and refrigerate for 30 minutes to a couple of hours before serving to thicken the sauce and let the flavors meld.
  • When ready to serve, stir the tzatziki sauce, transfer to a serving bowl, and drizzle with more olive oil if desired. Serve with veggies or pita.

Notes

This recipe makes about 2 cups of sauce (32 tablespoons). Store in a tightly-covered glass container in the fridge and use within 4 days. Adjust garlic based on preference for strength.
