Ingredients
  

Ground Beef

  • 1.5 lbs lean ground beef

Taco Seasoning

  • 1 tablespoon chili powder
  • 0.5 teaspoon garlic powder
  • 0.5 teaspoon onion powder
  • 0.25 teaspoon oregano
  • 0.5 teaspoon paprika
  • 1.5 teaspoon cumin
  • 0.5 teaspoon salt
  • 0.25 teaspoon pepper

Toppings

  • 1 15 oz. can black beans drained and rinsed
  • 1 15 oz. can whole corn drained
  • 1 pico de gallo garnish
  • 1 avocado garnish
  • 1 cup cheddar cheese grated
  • cilantro garnish
  • 1.5 cups brown rice approx. per serving

Instructions
 

  • Brown ground beef in a large skillet.
  • Mix together seasonings and sprinkle over meat. Stir to incorporate. Simmer for 3-5 minutes.
  • Add cooked rice to individual serving bowl.
  • Top with ground beef mixture. Add toppings – pico, avocado, cheese, corn, black beans, and cilantro.

Notes

This is a great prep ahead meal. Cook your meat, cook the rice, chop and prepare all your ingredients and just keep everything in the refrigerator until you are ready to serve. Heat up the meat and rice and add on everything else. Make this even easier by buying pre made guacamole, salsa, grated cheese and chopped lettuce from the store. Ingredients will last 4-5 days in the refrigerator.
