For the sushi
- 1 recipe sushi rice see recipe
- 8 oz imitation crab sticks finely chopped
- 3 tablespoon Japanese mayonnaise such as Kewpie
- 1 ripe avocado
- ½ English cucumber
- 8 sheets toasted nori seaweed cut in half
- toasted sesame seeds
Preparation
Make the sushi rice according to the recipe. Let it cool.
Finely chop imitation crab meat and mix with Japanese mayonnaise.
Wrap the bamboo sushi mat in plastic wrap for easy cleanup.
Place a sheet of toasted nori on the sushi mat and cut off ¼.
