  • 1 cup feta cheese, crumbled
  • ½ cup honey

  • 2 tablespoons red wine vinegar
  • 2 cloves garlic, minced

  • 1 teaspoon red pepper flakes adjust to taste
  • Salt to taste
  • Pepper to taste
  • Fresh parsley, chopped for garnish
  • 1 piece lemon, sliced for serving

Instructions
 

Preparing the Marinade

  • In a medium bowl, combine the honey, olive oil, red wine vinegar, minced garlic, dried oregano, red pepper flakes, salt, and pepper. Whisk everything together until well blended.
  • Taste the marinade and adjust the seasoning if necessary.
  • Place the chicken breasts in a large resealable plastic bag or a shallow dish. Pour the marinade over the chicken, ensuring each piece is well coated.
  • Refrigerate the chicken for at least 30 minutes, but for best results, let it marinate for 2 to 4 hours.

Preparing the Feta Topping

  • In a small bowl, combine the crumbled feta cheese with a drizzle of olive oil, a pinch of salt, and a sprinkle of black pepper.
  • Set the feta mixture aside.

Cooking the Chicken

  • Preheat your oven to 400°F (200°C).
  • Remove the chicken from the marinade and let any excess drip off. Discard the marinade.
  • Place the chicken breasts in a baking dish, ensuring they are spaced out evenly.
  • Spoon the prepared feta mixture evenly over each chicken breast.
  • Bake the chicken for 25 to 30 minutes, or until cooked through at an internal temperature of 165°F (75°C).
  • If desired, switch to broil for the last 2-3 minutes for extra color.

Serving the Dish

  • Let the chicken rest for about 5 minutes.
  • Prepare your serving platter with greens or roasted vegetables.
  • Slice the lemon into wedges for serving.
  • Garnish with freshly chopped parsley.
  • Serve warm, drizzled with remaining juices.
