Ingredients
  

  • 3 pounds yukon gold potatoes thinly sliced into ⅛th inch rounds
  • ½ white or yellow onion cut into slices
  • 2 tablespoons salted butter for the sauce
  • ¼ cup all purpose flour whole wheat, all purpose, or gluten free 1:1 flour also work
  • 1.5 cups unsweetened almond milk regular, skim or whole milk can also work
  • 8 ounces sharp cheddar cheese 2 heaping cups shredded
  • ½ teaspoon garlic powder
  • ¾ teaspoon salt plus more to taste
  • freshly ground black pepper
  • ½ cup gruyere cheese or substitute with more sharp cheddar
  • ¼ cup grated parmesan
  • fresh chopped parsley for garnish

Instructions
 

  • Preheat the oven to 375 degrees F. Spray a 2 quart square baking dish with nonstick cooking spray or grease with butter or oil.
  • Place sliced potatoes in three tight slanted rows. Add onion slices in between the rows and on top of potatoes.
  • Melt butter in a saucepan over medium heat. Whisk in flour and slowly add milk, alternating until fully incorporated. Bring to a simmer until creamy.
  • Stir in shredded cheddar cheese, garlic powder, salt, and pepper. Adjust seasoning as needed.
  • Pour the sauce evenly over the potatoes and onions.
  • Cover the pan with foil, then bake for 45 minutes.
  • Remove foil, sprinkle with gruyere and parmesan, and return to oven for 30-45 minutes until golden brown.
  • Garnish with fresh chopped parsley before serving.

Notes

This recipe can be made ahead and stored in the refrigerator for up to three days. It is great with added bacon for extra flavor.
