- 4 mini cucumbers sliced
- 10 mini sweet peppers sliced
Seasoning
- 0.5 Tablespoon Everything But the Bagel Seasoning Link to product
- 1 teaspoon Chili crisp Link to product
Sesame Ginger Dressing
- 0.25 cup extra virgin olive oil Link to product
- 0.25 cup unseasoned rice vinegar
- 1.5 Tablespoons tamari or soy sauce
- 1.5 Tablespoons maple syrup Link to product
- 2 teaspoons sesame oil Link to product
- 1 large clove garlic
- 1 inch fresh ginger knob
- 1 pinch black pepper
Making the Dressing
Make dressing by adding all the ingredients to a blender and blending until smooth and creamy. Set aside.
Add cucumber and bell pepper to a bowl. Add ¼ cup dressing, bagel seasoning and chili crisp. Toss to combine. Taste and add more seasoning, chili crisp and/or dressing, if needed!
