Ingredients
  

Zucchini

  • 2 medium zucchinis sliced into ¼-inch rounds
  • 2 tablespoons olive oil
  • ½ cup freshly grated parmesan cheese divided
  • ½ teaspoon garlic powder
  • ½ teaspoon Italian seasoning
  • ¼ teaspoon sea salt
  • ¼ teaspoon black pepper
  • 2-3 tablespoons reserved parmesan cheese for topping
  • chopped parsley or lemon zest for garnish (optional)

Preparation

  • Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper or spray with olive oil.
  • Rinse the zucchinis, slice into ¼-inch thick rounds, and pat them dry with a paper towel.
  • In a mixing bowl, toss the zucchini with olive oil, garlic powder, Italian seasoning, sea salt, and black pepper until evenly coated.
  • Add most of the grated parmesan cheese and toss again, leaving some aside for topping.
  • Lay the zucchini slices on the baking sheet in a single layer and sprinkle reserved parmesan cheese on top.
  • Bake in the oven for 18 to 22 minutes, flipping halfway through to ensure even browning.
  • Once baked, let cool slightly, garnish with parsley or lemon zest, and serve immediately.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days and reheat in the oven or air fryer for best results.
