  • Begin by bringing a large pot of salted water to a boil. Once boiling, add your pasta of choice and cook according to the package instructions until al dente. Be sure to reserve about 1 cup of pasta water before draining.
  • While the pasta cooks, heat olive oil in a large skillet over medium heat. Add the minced garlic and sauté for about 1-2 minutes until fragrant but not browned.
  • To the skillet with garlic, add the pumpkin puree and stir well to combine. Cook for 2-3 minutes, allowing the flavors to meld.
  • Next, pour in the heavy cream, stirring continuously until the mixture is smooth.
  • Stir in the grated Parmesan cheese, ground nutmeg, salt, and black pepper. Continue stirring until the cheese melts and the sauce thickens slightly. If the sauce is too thick, gradually add reserved pasta water until you reach your desired consistency.
  • Once the pasta is cooked and drained, add it to the skillet with the creamy pumpkin sauce. Toss well to ensure that all the pasta is evenly coated in the sauce.
  • To serve, dish out the pasta onto plates or into bowls. Garnish with additional Parmesan cheese and chopped fresh parsley or sage for an extra touch of flavor and presentation.
