Ingredients
  

Wet Ingredients

  • ½ cup Orange EVOO
  • ½ cup Brown Sugar
  • ¼ cup Granulated Sugar
  • 1 large egg
  • 1 cup Greek yogurt

Dry Ingredients

  • 1 cup Rolled oats
  • 1 cup Flour
  • 1 teaspoon Sea salt
  • 1 teaspoon Baking powder
  • ½ teaspoon Baking soda
  • ¾ cup Dried cranberries
  • ½ cup Chopped pecans

Instructions
 

Muffin Preparation

  • Preheat oven to 400 degrees.
  • Prepare 12 muffin cups with liners or grease cups.
  • In a large bowl, beat oil, sugar and egg.
  • Add oats and yogurt and stir to mix.
  • Add flour, salt, baking powder and baking soda to wet ingredients.
  • Stir until well blended.
  • Fold in cranberries and pecans.
  • Fill cups ⅔ with batter.
  • Bake for 20 minutes and enjoy!

Notes

These muffins are best enjoyed fresh and can be stored in an airtight container for a few days.
