  • ¼ teaspoon ground nutmeg optional
  • Fresh parsley or basil, chopped for garnish

  • Preheat your oven to 400°F (200°C). Cut the spaghetti squash in half lengthwise and scoop out the seeds. Drizzle inside with olive oil, salt, and pepper. Place cut-side down on a baking sheet and roast for 30-40 minutes until tender.
  • Season chicken breasts with salt, pepper, garlic powder, onion powder, and Italian seasoning. Heat olive oil in a skillet and cook the chicken for 5-7 minutes per side until cooked through. Remove and let it rest before slicing.
  • Melt butter in the same skillet, add minced garlic and sauté for 1 minute. Stir in softened cream cheese until smooth, then add almond milk gradually while whisking until thickened. Stir in grated Parmesan cheese and nutmeg if desired.
  • Combine shredded spaghetti squash in the skillet with the sauce and toss gently. Add sliced chicken and mix to coat everything in the sauce. Adjust thickness with more almond milk if needed, and cook for another 2-3 minutes.
  • Transfer to serving plates and garnish with fresh herbs. Serve immediately and enjoy!

For variations, consider adding vegetables or adjusting seasoning to taste. Overcooked chicken may become dry, so ensure to cook just right.
