Ingredients
  

Pizza Crust

  • 3.25 cups all-purpose flour spooned & leveled
  • 0.5 cups yellow cornmeal
  • 1.25 teaspoons salt
  • 1 Tablespoon granulated sugar
  • 2.25 teaspoons instant yeast Platinum Yeast from Red Star (1 standard packet)
  • 1.25 cups slightly warm water
  • 0.5 cups unsalted butter divided (¼ cup melted, ¼ cup softened to room temperature)
  • olive oil for coating

Tomato Sauce

  • 2 Tablespoons unsalted butter
  • 1 small onion grated (about ⅓ cup)
  • 0.75 teaspoons salt
  • 1 teaspoon dried oregano
  • 0.5 teaspoon crushed red pepper flakes optional, but recommended
  • 3 cloves garlic minced
  • 28 ounces crushed tomatoes one can (794g)
  • 0.25 teaspoon granulated sugar

Toppings

  • 4 cups shredded mozzarella cheese
  • 0.5 cups grated parmesan cheese
  • 0.5 cups sliced pepperoni optional
  • 4 slices bacon cooked and crumbled, optional

Instructions
 

Preparation

  • Combine the flour, cornmeal, salt, sugar, and yeast in a stand mixer bowl. Add warm water and ¼ cup melted butter. Mix until the dough pulls away from the sides of the bowl, about 4-5 minutes.
  • Remove the dough, form into a ball, and coat with olive oil. Cover with aluminum foil and let rise in a warm area for 1-2 hours.
  • Roll out the dough into a large 15×12-inch rectangle and brush with ¼ cup softened butter. Cut the dough log in half and let rise in the refrigerator for 1 hour.

Sauce

  • Melt butter in a saucepan, add grated onion, salt, oregano, and red pepper flakes. Cook for about 5 minutes.
  • Add garlic, tomatoes, and sugar, then simmer for about 30 minutes until thick.

Assembly and Baking

  • Preheat oven to 425°F (218°C). Roll out the dough into a 12-inch circle and press into cake pans.
  • Fill each pizza with half of the cheese, desired toppings, and pour 1 and ¼ cups of sauce on top. Sprinkle with parmesan cheese.
  • Bake for 20-28 minutes or until the crust is golden brown. Cool for 10 minutes before serving.

Notes

Dough may be prepared through step 4 and stored in the refrigerator for up to 1 day or frozen for up to 2 months. The sauce can also be prepared in advance and stored similarly.
