Salad Ingredients

  • 40 pieces ripe cherry tomatoes halved
  • 1 cup pitted and sliced green olives
  • 1 can (6 ounce) black olives drained and sliced
  • 2 pieces green onions minced
  • 3 ounces pine nuts toasted
  • ½ cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 tablespoon white sugar or to taste
  • 1 teaspoon dried oregano
  • to taste salt
  • to taste pepper

Instructions
 

Salad Preparation

  • Combine cherry tomatoes, green olives, black olives, and green onions in a salad bowl.
  • Toast pine nuts in a dry skillet over medium heat until golden brown, turning frequently. Stir into tomato mixture.
  • Whisk olive oil, red wine vinegar, sugar, and oregano together in a small bowl; season to taste with salt and pepper.
  • Pour dressing over salad, and gently stir to coat tomatoes.

Notes

I like to chill this salad for an hour before serving. It allows the flavors to blend.
