Ingredients
  

Pasta and Chicken

  • 250 g pasta, uncooked (around 8oz)
  • 275 g chicken, cut into bite-sized pieces (around 9.6 oz)
  • 2 tbsps oil
  • 4 cloves garlic, minced

Seasonings

  • ½ teaspoon salt (adjust to your taste)
  • ½ teaspoon black pepper
  • ½ teaspoon red chilli powder
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • ½ teaspoon onion powder
  • ¼ teaspoon oregano
  • 1 teaspoon chilli sauce/sriracha
  • 2 tbsps tomato paste

Dairy

  • 130 ml milk (½ cup + 1 tbsp)
  • 110 ml double cream (¼ cup + 3 tbsps)
  • 100 g mozzarella cheese (1 cup + extra to sprinkle on top)
  • 100-120 ml pasta water (around ½ cup)

Instructions
 

Cooking Steps

  • Add pasta to a pot with some cold water, salt, and a little bit of oil. Cook pasta until al dente.
  • In a pan, warm up some oil, then add fresh, minced garlic. Cook this over medium heat for around 1 minute or until golden.
  • Add bite-sized pieces of chicken to the pan and cook over medium-high heat for around 3-4 minutes until the chicken turns white.
  • Add salt, black pepper, red chilli powder, garlic powder, paprika, onion powder, and oregano, mixing into the chicken.
  • Add a little sriracha and the tomato paste, cooking on medium-high heat for about 1 minute.
  • Gradually add milk and cream, stirring continuously until bubbling.
  • Add cheese and mix until melted and fully incorporated into the sauce.
  • Gradually add leftover pasta water, bring to a boil while stirring, and cook for about 1.5 minutes.
  • Add cooked pasta, coat it fully with the sauce, and sprinkle extra cheese on top. Cover and let cook over low heat until cheese melts.
  • Serve and enjoy your cheesy chicken pasta!

Notes

Adjust salt to your taste; there will be salt from the pasta water and cheese. Use more pasta water for desired sauce consistency. Swap oregano for Italian seasoning or mixed herbs if needed.
