  • 6 pieces thin corn tortillas 5 to 6 inches wide
  • ½ cup refried beans
  • ½ teaspoon chili powder optional
  • 1 ½ cup Mexican-style blend shredded cheese
  • ½ cup salsa, sour cream, and/or guacamole for serving
  • cooking spray for baking sheet

Instructions
 

Preparation and Baking

  • Preheat the oven to 450°F and arrange a rack in the center. Line a baking sheet with parchment paper and place it in the oven to heat.
  • Spread refried beans on one side of each tortilla, about 1 heaping tablespoon each, and arrange in a single layer on a platter. Dust with chili powder if using.
  • Remove the heated baking sheet from the oven, line with parchment, and spray with cooking spray. Place tortillas bean side up on the sheet.
  • Top each tortilla with about ¼ cup of cheese mounded in the center.
  • Bake until the cheese has melted and tortilla is soft, about 1 to 2 minutes. Then fold each tortilla into a taco shape using a spatula.
  • Return to the oven and bake until lightly crisp on the bottom, 5 to 7 minutes. Flip and cook until gooey with crispy cheese bits, another 5 to 7 minutes.
  • Let cool for a few minutes. Serve with salsa, sour cream, and/or guacamole.

Notes

Cheesy baked tacos are best served fresh, but can be reheated at 350°F or in an air fryer.
