Ingredients
  

  • 1 tablespoon olive oil
  • 4 slices bacon chopped
  • 1 medium onion thinly sliced
  • 2 cups Arborio rice for risotto
  • 4 cups low-sodium chicken broth or vegetable broth for a vegetarian version
  • 1 cup dry white wine optional, can replace with extra broth
  • 2 tablespoon unsalted butter
  • ½ cup grated Parmesan cheese
  • Salt to taste
  • Pepper to taste
  • Fresh parsley chopped (optional, for garnish)

Instructions
 

  • Heat the olive oil in a large skillet or pot over medium heat. Add the sliced onions and cook, stirring occasionally, for about 15–20 minutes until caramelized.
  • In the same skillet, add the chopped bacon and cook over medium heat until crispy, about 5–7 minutes. Remove and drain on a paper towel-lined plate.
  • Add the Arborio rice to the skillet and toast it for 1–2 minutes, stirring to coat the rice in the bacon fat.
  • Slowly add the white wine (if using), stirring constantly until most of the liquid is absorbed by the rice.
  • Begin adding the chicken broth, one ladleful at a time, stirring frequently and allowing each addition to be absorbed until the rice is creamy and al dente, about 20–25 minutes.
  • Stir in the caramelized onions, crispy bacon, butter, and grated Parmesan cheese until well combined.
  • Season with salt and pepper to taste and serve hot.

Notes

You can add other ingredients like peas, spinach, or mushrooms. Prepare caramelized onions and bacon in advance for easier preparation.
