Ingredients
  

Cabbage and Toppings

  • 1-2 heads green cabbage tight and firm head for best results
  • 1 tablespoon avocado oil for brushing
  • ¼ cup tomato sauce or ketchup about 60ml
  • ½ cup shredded cheese about 60g

Beef Patty Ingredients

  • 1 lb ground beef (450g)
  • 1 tablespoon Dijon mustard
  • ½ cup chopped parsley (15g)
  • 1 teaspoon minced garlic
  • ½ teaspoon sea salt or to taste
  • ¼ teaspoon black pepper or to taste
  • ¼ teaspoon red pepper flakes

Preparation Steps

  • Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper. Slice the cabbage into 1-inch (2.5 cm) thick steaks and arrange them on the sheet. Brush each with cooking oil and sprinkle with a bit of salt and pepper. Bake for 10 minutes, just enough to soften them slightly.
  • While the cabbage bakes, mix together the ground beef, Dijon mustard, grated garlic, parsley, red pepper flakes, salt, and black pepper in a medium bowl. Divide the mixture into 4 equal portions and shape into patties.
  • Remove the cabbage steaks from the oven. Spoon a little tomato sauce or ketchup on each cabbage slice. Place a beef patty on top of each one. Return the tray to the oven and bake for 10–12 minutes, or until the patties are cooked through.
  • In the last 2–3 minutes of baking, sprinkle mozzarella on top of each patty. Bake just until the cheese melts and bubbles slightly.
  • Remove from the oven and serve warm. Garnish with extra parsley, if desired. Enjoy your cabbage burgers as a main course or even as a fun appetizer!

Notes

Look for a tight, firm head of cabbage to ensure the steaks hold their shape during baking. Customization options include using different cheeses or adding more vegetables as toppings.
