Ingredients
  

  • 1 tablespoon olive oil
  • 1.5 pounds boneless skinless chicken breasts, cubed seasoned with salt and pepper
  • 1.5 tablespoons Onion Onion™ Seasoning
  • 1 cup shredded mozzarella cheese
  • 1 14.5 ounce can diced tomatoes with basil, garlic and oregano or diced Italian tomatoes, undrained
  • 1 6 ounce package stovetop-style savory herbs stuffing mix
  • 0.5 cup water

Instructions
 

  • Preheat oven to 400°F. Grease a 13x9-inch baking dish with oil. Top with seasoned chicken, Onion Onion Seasoning and cheese.
  • In large bowl, combine tomatoes, stuffing mix and water; stir until moistened. Spoon over cheese.
  • Bake until internal temperature of chicken reaches 165°F, about 15-20 minutes. Place under broiler to brown and crisp topping, if desired.

Notes

Serve with a garden salad. Make Ahead & Freeze: Combine seasoned chicken and Onion Onion Seasoning in a gallon freezer bag. Place cheese in a quart freezer bag. Place tomatoes in a quart freezer bag. Place all bags in a gallon freezer bag. Seal well, label, and freeze. Thaw completely before continuing with step 1.
