  • 10 pcs eggs
  • 0.5 cup milk or cream
  • 1 cup shredded cheddar cheese
  • 0.5 cup chopped vegetables (bell peppers, tomatoes, onions)
  • 0.5 cup cooked crumbled bacon or sausage (optional)
  • 0.5 cup chopped turkey (optional)
  • salt to taste
  • pepper to taste
  • non-stick cooking spray for muffin tin

  • Preheat your oven to 350°F (175°C).
  • Generously spray a muffin tin with non-stick cooking spray.
  • Chop up any vegetables you plan on using and pre-cook bacon (if using).
  • In a mixing bowl, whisk together eggs, milk or cream, salt, and pepper until combined.
  • Place veggies, meat, and a bit of cheese into each muffin tin cavity.
  • Pour or spoon the egg mixture into the muffin tin, filling each cup about ¾ full.
  • Stir each muffin cavity to ensure the ingredients are well mixed.
  • Bake for about 12-18 minutes until set and slightly golden.
  • Let cool for a few minutes, then use a knife to loosen them from the tin.
  • Serve warm. Leftovers can be stored in the refrigerator for up to 4 days, or frozen for up to 2 months.
