  • 2 tablespoons olive oil
  • 1 medium onion diced
  • 3 medium carrots sliced
  • 2 stalks celery sliced
  • 3 cloves garlic minced
  • 8 cups low-sodium chicken broth
  • 2 cups cooked chicken shredded
  • 2 cups egg noodles
  • 1 teaspoon dried thyme
  • Salt to taste
  • Pepper to taste
  • 2 tablespoons fresh parsley chopped

Instructions

  • Add the shredded chicken and egg noodles. Cook for 8-10 minutes, or until noodles are tender.
  • Season with salt and pepper to taste. Stir in fresh parsley before serving.
